Symbyo begins with the goal of uncovering yeast biocapsules, hollow, white spheres that confine millions of yeast cells within their walls. Since their discovery, these spheres have been thoroughly analyzed, tested for use in alcoholic fermentations, and refined for their fermentation potential. All this in the laboratory of the University of Córdoba (Spain) and the University of California, Davis (USA). Today, yeast biocapsules finally greet the world and express their desire to help in the most natural way possible to solve the problems that a winemaker encounters in his winery every day.
